3 ounces mulato chiles (6 large dried)
2 ounces ancho chiles (4 large dried)
1 ounce pasilla negro chiles (3 dried)
½ cup plus 3 tablespoons vegetable oil
1 1/2 tablespoons chipotles en adobo
1/3 cup raw or blanched almonds
1/3 cup raw shelled peanuts
3 tablespoons packed raisins
1 small ripe (mottled brown or black) plantain
1/3 cup unhulled sesame seeds (100 gr, 3.5 oz), plus additional for garnish
¼ teaspoon coriander seeds
2 cloves
5 black peppercorns
3 allspice berries 
1 (3-inch) pieces Mexican cinnamon
1/8 teaspoon aniseeds
1 ½ teaspoons kosher salt
2 ounces Mexican chocolate, such as Ibarra or Abuelita (⅔ disk), or bittersweet chocolate
